Make the Ranchero Sauce

“Assemble your ingredients like you’re about to enter a cooking duel: tortillas, eggs, tomatoes, onion, garlic, jalapeño — don’t be a baby — and the fancy crumbly cheese.”

Warm the Beans

Sauté onion 3 min, add garlic + jalapeño. “If you rub your eyes now, that’s on you.” Add tomatoes, simmer 10–15 min. Finish with cilantro.

Crisp the Tortillas

“Mash them a bit or leave them whole so they can show off their legume pride. Season so they don’t taste like sadness.”

Fry Eggs Sunny-Side Up
